Home made kefir is one of the most heavenly drinks I can imagine. Made from milk, it is delicious, nutritious, and good for one's health. Some people think it is the healthiest food on the planet.
Like yogurt, kefir contains probiotics, otherwise known as "culture". Have you seen those TV ads with Jamie Lee Curtis eating yogurt and talking about the yogurt cultures and how healthy they are? The same principle applies to kefir, yet in a much more powerful way nutritionally. Some people claim that kefir has dozens of health benefits.
It is full of protein, calcium, and vitamins, and is a perfect dairy beverage for the millions of people, like me, who cannot drink milk because they are lactose intolerant. If you add other ingredients, you can also enjoy the nutritional advantages of fruit juice, natural sugars, and protein powders.
Which leaves us with this book and why I wrote it - so you can make your own plain kefir at home for no more than the price of milk and then flavor it any way you like it, and sweeten it as much as you prefer to make a choice of many tasty kefir beverages.
For all you organic people reading this, you will be pleased to know that 99% of my kefir ingredients are organic, including all the juices and sweeteners. I feel very strongly about only buying organic grass fed milk, but if you are not interested in organic food and you are not willing to pay more for some of the organic kefir ingredients, like juice, you can just use commonly available ingredients from the supermarket that are not organic. You will still gain the health benefits of your fermented milk and its probiotics.
You will also be pleased to know that you can make a glass of kefir for exactly the same price as the same sized glass of milk. For example, if I buy ? gallon of organic whole cow's milk for $4.00, one cup of plain kefir will cost 50? and a small serving of ? cup will only cost 25?. A ? cup of kefir with ? cup of juice makes a fine small beverage for well under a dollar.
